Dr. Erin Knopf

Dr. Erin Knopf (she/her)

Dr. Knopf is dedicated to treating patients with eating disorders holistically. As a triple-boarded physician and Certified Eating Disorder Specialist, she uses her combined training with intentionality to assess disease severity and devise comprehensive plans to address the eating disorder behaviors as well as comorbid symptoms of anxiety, depression, OCD and more.

Education: Dr. Erin Knopf is a board-certified pediatrician, adult psychiatrist and child/adolescent psychiatrist as well as an iaedp Certified Eating Disorder Specialist. She graduated from The George Washington University in Washington, D.C. with a degree in biology and a minor in human services. She received her medical degree from The American University of the Caribbean and completed clinical training in The United Kingdom, Miami and New York. Her interest in eating disorders developed in 2008 while working at Children’s Medical Center in Dallas, TX. This interest continued throughout her training, and she took an active role on medical and psychiatric teams for a wide array of cases. She completed residency training at The University of Kentucky in a combined residency program, the Triple Board program, in pediatric medicine, adult psychiatry and child/adolescent psychiatry. She was awarded honors in Adolescent Medicine, Behavior and Development Medicine, and Clinical Teaching in Psychiatry. As Chief Resident, she supervised adolescent girls in a weekly eating disorder outpatient therapy group. She is a member of IAEDP, AED, AACAP, APA and AAP.

Clinical Experience: Dr. Knopf worked as an attending psychiatrist at The Eating Recovery Center in Denver, CO in 2018 to 2022, treating adult and youth patients in a vertically integrated model with inpatient/residential and partial hospitalization programs. At the onset of the COVID-19 Pandemic, she served as unit psychiatrist for ten months at the ACUTE Center for Eating Disorders, the only ED-dedicated ICU in the country.

Treatment Philosophy: I completed my Triple Board residency to best treat ED patients holistically, mind and body. Given the intertwined nature of the psychological and the physical outcomes of EDs, my background in pediatric medicine and psychiatry allows me to assess disease severity and create comprehensive treatment approaches. I try to limit polypharmacy and use psychotropics with intentionality to mitigate comorbid symptoms of anxiety, depression, OCD and improve dysfunctional neurobiological pathways resulting from eating disorder behaviors. I also describe myself as the “mechanic of the body” and prioritize psychoeducation and biological education for patients and families to foster insight and achieve treatment alignment.

Brandon Johnson is passionate about creating the team and technology to help thousands into eating disorder recovery. He is a proven entrepreneur, startup attorney, and active venture investor. Brandon is the founder of The Johnson Law Group – a law firm serving startups, former Chief Legal Officer at WeatherCheck (YC S19), and on the founder advisory board of several fintech, health and fitness, healthcare, and gaming companies. Brandon holds a BA from Western Kentucky University and a J.D. from Louis D. Brandeis School of Law.

Dr. Hannan is a licensed clinical psychologist with two decades of experience in academia and private practice. She is a Certified Eating Disorders Specialist and Supervisor (CEDS-S) through IAEDP, the International Association of Eating Disorders Professionals. This is a prestigious credential only given to professionals with extensive training and experience in the field of eating disorders, helping protect clients from those who are not well-versed in the specialty. Dr. Hannan is committed to deepen intersectional access to education and prevention of eating disorders, disordered eating, and body image issues. She is also a certified group psychotherapist (CGP) through AGPA, the American Group Psychotherapy Association, which is another prestigious credential based on extensive training and ability to provide evidence-informed group based treatment and supervision.
Dr. Hannan has an active therapy style and a warm, open, and vibrant personality. Her philosophy of treatment involves validating her clients to explore emotion while also strongly encouraging clients to face discomfort and feedback so they can move toward desired behavioral change. She focuses on connection and also on humor and enjoyment of life!

Nicole is a Licensed Clinical Social Worker, Certified Eating Disorder Specialist, and Certified Addiction Counselor. Nicole spent the last nine years working at the Eating Recovery Center / Pathlight Mood and Anxiety Center as a Primary Therapist with Child & Adolescent Services, where she provided individual, group, and family therapy to youth in residential, inpatient, and partial hospitalization levels of care. More recently during her ERC tenure, Nicole was a Clinical Assessment Supervisor, supporting individuals during the admission process through guidance, evaluation, and determination of appropriate levels of care.

Nicole transitioned to VERY.Health with the hope of helping to fill the gap that exists in the outpatient eating disorder treatment community. Her roles on both the Founder Advisory Board as well as the Director of Admissions will be in supporting people from all walks of life to access evidence-based, high-quality care. She understands the bravery and courage it takes to seek help for oneself or for a loved one and is dedicated to making the process as simple, welcoming, and supportive as possible.

Stephanie Wilson (she/her)

Stephanie is a Registered Dietitian and holds a master’s degree in nutrition and dietetics from Simmons University. She completed her dietetic internship at University of Minnesota through the eating disorder track, doing intensive training at The Emily Program. Stephanie specializes in athletes experiencing low energy availability, eating disorders, disordered eating, decrease in performance and Relative Energy Deficiency Syndrome (RED-S). After working for 2.5 years at a Clinical Dietitian at Eating Recovery Center at the inpatient and residential level of care, Stephanie stepped down to outpatient eating disorder care and worked at Side By Side Nutrition. Stephanie has since moved on to work at Very Health continuing to offer expert ED treatment for all athletes and individuals.

Stephanie has worked with all populations, adults, teenagers, and adolescents. She has experience helping adults identify reasons behind why the eating disorder occurred and persisted, and has developed ways to help individuals fuel mind and body.
She also has experience working with Family-Based Therapy, empowering parents to reclaim feeding their child. She is a fierce recovery ally and believes all individuals can create new experiences with food, movement, and body image. Stephanie is determined to support clients to shift from the comfortable and known to the unknown, to feel empowered to create change in their life.

Stephanie ran cross country and track in college and since college has been a competitive runner and qualified for the 2020 Olympic Trials in the marathon.

Jill has a passion for working with adolescents, adults, and family as they work to explore a changed mindset and relationship with food. Jill received a Bachelor of Science degree in Dietetics from Oregon State University, and completed her dietetics internship in addition to earning her Master’s degree in Dietetics at Mount Mary College in Milwaukee, Wisconsin. She first gained experience in the treatment of eating disorders during her dietetic internship, and after years working in other areas of dietetics, knew that working in eating disorder treatment was her dream job. Prior to working at Very.Health, Jill worked for 7 years as a dietitian for patients at the inpatient, residential, and partial hospitalization level of care. She enjoys providing nutrition education to her patients, and is often heard saying that no foods are off limits, and all foods can be incorporated into everyone’s life using balance and variety. Jill has spent a vast majority of her eating disorder treatment experience in child and adolescent care, providing education to patients on nutrition science, and with parents/caregiver on Family Based Treatment (FBT) and how to best support their child in recovery. She enjoys providing nutrition education to patients of all ages, and families, to help them to know the difference between fact and eating disorder messaging. In Jill’s leisure time, she enjoys hiking, backpacking, reading (mostly historical fiction), and exploring Colorado!

Lisa obtained her Bachelors in Nutrition and Dietetics from Metropolitan State University of Denver and her Masters in Sport Nutrition from the University of Colorado. She attended Virginia Tech for her dietetic internship.

Lisa knew she wanted to work in healthcare from a young age. She started working as a certified nursing assistant in high school. The natural progression was to attend nursing school. However, after her first clinical rotation she realized that was not the right discipline. Lisa then became a massage therapist and worked in chiropractic clinics and spas for 11 years. While taking an introductory course to nutrition, Lisa knew she had found her calling in the healthcare industry. Lisa initially had interest in working with eating disorders during graduate school while she was shadowing a private practice eating disorder dietitian. Upon receiving credentials as a registered dietitian, she started working at Eating Recovery Center. She has continued to pursue work with this preferred population.

Lisa makes every attempt to pet all dogs that cross her path! (Obviously with owner approval first ) She has two boxer rescues of her own, Ginger and Graham. Lisa also loves plants of any kind and is consistently accumulating more. She enjoys gardening in the summer and prefers to support local farmers as much as possible.

Rachel is a Licensed Clinical Social Worker and holds a Master of Social Work with Clinical Specialty from Simmons University. She has worked with individuals and families for the past 6 years, with a primary focus on eating disorders. Several modalities she has found successful in identifying and unpacking the function of the eating disorder include Acceptance and Commitment Therapy (ACT), Cognitive Behavioral Therapy (CBT) and Emotion Focused Family Therapy (EFFT). William Hornby is at the forefront of raising awareness for men with eating disorders with his advocacy on social media. He speaks publicly on advocacy, mental health, and eating disorder recovery. He travels around the world both in person and virtually giving workshops and presentations on “The Power of Becoming the Advocate You Needed”. He is the recipient of the William Donald Schaefer Helping People Award for 2021. He is a member of the Eating Disorder Coalition’s Young Adult Council and the National Alliance for Eating Disorders’ Collaborative. He has also worked with the National Eating Disorder Association and Project HEAL. He graduated from Temple University in 2022 with a BBA in Business Management and BFA in Musical Theater. He is also a singer-songwriter with music about recovery and mental health, including “Clay”, touted as a body neutral anthem. He is an exceptional pumpkin carver and theater performer as well.

As someone who recovered from his own eating disorder through remote video calls with his psychiatrist, therapist, and registered dietitian, he is a fierce believer in VERY’s mission to provide those services remotely, all under one company. As a man in eating disorder recovery, William became hyper aware of how few treatment options were available to men, especially due to an extreme lack of in-person treatment centers that accepted men. VERY’s goal of making recovery more accessible for everyone, no matter their identities makes him hopeful for the future of what recovery can look like.

Stefanie Ginsburg, RD, CEDRD-S has been a Registered Dietitian since 2006, after receiving her Bachelor’s Degree in Nutritional Sciences from Rutgers University in New Brunswick, NJ and completing a one year dietetic internship with the Rutgers School of Biomedical and Health Sciences. Her career began as a Nutrition Therapist working for three years at the Center for Eating Disorders through Penn Medicine Princeton Health, treating inpatients and partial hospitalization patients of all ages. During an eight year tenure at Eating Recovery Center of Denver’s Child and Adolescent Program, she became a Senior Clinical Dietitian and the company’s subject matter expert in the treatment of patients with an ARFID diagnosis, helping to create a treatment protocol, admission assessments and providing trainings for fellow clinicians and floor staff. While with ERC and since starting her private practice, she has trained a multitude of professionals, working at all levels of care, about ARFID and best care practices. She and Rebecca Thomas, RD, LDN have co-created and co-lead two different sessions of Mastering ARFID: 8 Week Training for Dietitians, as well as an online training course for clinicians entitled, Treating ARFID: The Newest Eating Disorder on the Block. Located in the Greater Denver Metro Area, her aim is to bring expertise in and dedication to eating disorders as a Certified Eating Disorders Registered Dietitian and Approved Supervisor (CEDRD-S), her many years of experience helping people make peace with food, and her ARFID training and consulting services to eating disorder treatment centers, providers, and support systems.
As a member of the Advisory Board for VERY.Health, Stefanie brings her strong clinical knowledge with eating disorders as well as her awareness of the outpatient landscape to help this novel setting for outpatient care succeed.

Neeru Bakshi is a board certified psychiatrist, speaker, and advocate for mental health equity. Dr. Bakshi completed her psychiatry training at Baylor College of Medicine and the University of Washington. She is a Certified Eating Disorder Specialist and co-chair of the International Association of Eating Disorder Professionals African-American/BIPOC Subcommittee. Dr. Bakshi is a fellow of the American Psychiatric Association, and she has served in a variety of positions in various organizations. Dr. Bakshi is a national speaker on issues pertaining to mental health equity with a focus on South Asians.
